In the deep August heat, I traveled to the Netherlands to photograph some pretty tasty grilled veggies, the wonderful chefs preparing them, and some fine natural wines. The commission for Green is Golden was a treat.

Located in the western fringes of Amsterdam’s old-centre, Café Binnenvisser has the heart of a brown-bar, the soul of a sitting-room, and a plant-forward culinary edge – thanks to head chef Guus Lourijsen – that’s put them on the map for both vegetarian food and natural wines. Unpretentious and cosy, it’s the home of the creative class of Amsterdam – and Guus walks easily among them.
